Food

The
ancient princely state of Rajasthan gave rise
to a royal cuisine. Their food cooked in pure
ghee is famous for it's mouth- watering aroma.
Rajasthani cooking was also influenced by both
the war-like lifestyles of its inhabitants and
the availability of ingredients in the desert
region. Food that could last for several days
and could be eaten without heating was preferred,
more out of necessity than choice. Scarcity of
water and lack of fresh green vegetables also
had their effect on Rajasthani cooking.
Generally, Rajasthani curries are a brilliant
red but they are not as spicy as they look. Most
Rajasthani cuisine uses pure ghee (clarified butter)
as the medium of cooking. A favorite sweet dish
called lapsi is prepared with broken wheat (dalia)
sautéed in ghee and sweetened. Apart from
the spicy delicacies, each of the regions of Rajasthan
is distinguished by its popular sweet ladoos of
Jaisalmer, mawa kachori of Jodhpur, malpuas of
Pushkar, dil jani of Udaipur, mishri mawa and
ghevar of Jaipur, sohan halwa of Ajmer, mawa of
Alwar, and rasgullas of Bikaner, to name a few.
Bikaner also has a whole range of other savories
and snacks like the world famous Bikaner ki bhujia.
Some of the famous dishes include;Jaipuri Mewa
Pulao, Rajahastani Dal Bati, Lachchedar Parethe.

PORT
BLAIR |
|
Port Blair,
the capital, has only a handful of sights.
This small town has changed in the last
three decades from one which saw a ship
from the mainland once a month if the weather
permitted, to a place connected by flights
from Chennai and Kolkatta several times
a week. It has now hospitals, shops, schools
and colleges and a few museums, in addition
to resort hotels and watersports facilities.

Cellular
Jail (National Memorial), located
at Port Blair, is a mute witness to the
tortures meted out to the freedom fighters,
who were incarcerated in this Jail. The
Jail, completed in the year 1906 acquired
the name, 'cellular'
because it is entirely made up of individual
cells for the solitary confinement of the
prisoners. It originally was a seven pronged,
puce colored building with a Central Tower
acting as its fulcrum and a massive structure
comprising honey-comb like corridors. The
building was subsequently damaged and presently
three out of seven prongs are intact. The
Jail now a place of pilgrimage for all freedom
loving people, has been declared a
National Memorial.
The
saga of the heroic freedom struggle is brought
alive in a moving Son-et-Lumiere' shown
daily at 6.00 PM (Hindi) and 7.15 PM (English).
Also there is a Museum and an Art Gallery
which is open on all days except Monday
from 9.00 AM to 12 Noon and 2.00 PM to 5.00
PM.
